Xarel·lo

Description

Its clusters are medium and dark, with medium-large berries with a spherical shape and a sweet flavor. It gives the cava body and structure. Xarel·lo wines are aromatic (honey and raisins) balanced, sweet, silky, tasty, with a high alcohol content and good acidity, which means that good results are not obtained in the preparation of young people but when it is passed through the cask.

Origin: Already in the 10th century it was used in the Catalan region of Alella to make mistelas for liturgical purposes. It is a traditional variety from the Penedès, used to make cava together with Macabeo and Parellada.

Synonym: Cartoixà, Pansa blanca, Pansal, Xarello, Pansalet

Weaknesses: Sensitive to powdery mildew (which is usually avoided by trellising vines), mites and cluster moths.
